Color-Full Summer Chicken Stew
Heat in a large frying pan:
3 tablespoons Olive Oil
Add and saute until soft:
1 medium white Onion – chopped
3 cloves Garlic – minced
Add and continue to sauté until cooked through:
1 pound Chicken – cubed
Add and continue to sauté until softened:
1 Asian Pear – peeled and cubed
½ can Garbanzo Beans – rinsed and drained
¼ cup Raisins
¼ cup Goji Berries
Add and continue to sauté until softened:
1 medium Tomato – cubed
3 cups fresh Spinach
Add until melted:
2 tablespoons Butter
Serve over Couscous or Quinoa
